strata-gy

I just put a spinach and muenster cheese egg strata in the fridge to eat tomorrow. No, I am not your average 23 year old grad student. Unless they all come home from class and unwind by preparing food for the next day, and maybe more people do than I think. Who knows. I hope its good, I just kind of winged it and reduced a recipe for a larger dish.

Food Daze

Saturdays were made for coffee, cleaning, and cooking! Last night I had some amazing mac n’ cheese. I love baked mac n’ cheese. Something about how the noodles get crispy  on the top and bubbly cheese sauce. Chedderly deliciousness.

Also this week I made Brussels Sprout, Cauliflower and Spicy Chicken Sausage Gratin. Sooo tasty, easy and a great left over (which is always good since I generally cook for one). This is kind of my own creation, I wrote down the recipe here if anyone is interested.

Gnocchi and French Onion Soup!

This past sunday I made gnocci for the first time, and it didn’t go so well. I made Butternut Squash gnocchi and I’m not sure what happened but they turned out sticky, dense and chewy. I don’t know if I didn’t add enough flour, or because  I only used butternut there wasn’t enough starch to make them light. I’m not sure, but the recipe made a whole lot so I’m stuck with it for a while. Tonight I made some and instead of just eating it boiled I decided to sauté it in a skillet with some butter and fresh thyme to crisp the gnocchi up a little. And TADA! Delicious!! Now I am very excited about the gnocchi in the freezer and my hopes to (successfully) make it again.

Last night I made French Onion soup, and its super tasty! The only thing is now my apartment smells like onions. The recipe called for 8 cups of onions and when I poured all the onions I was a little frighted that my pot would runneth over! The soup was soup-er good, and I couldn’t keep my spoon out of the pot while it was simmering.

cooked wednesday.

I’ve had such a crazy week/weekend or so that I needed a today to just not do a single thing.  I did however cook! Which is all I ever productively do.
