Killer Pizzzaaaahh!

Ok so I love cooking, if you’ve been reading my blog for any length of time you’d know this. I love trying out new recipes. That all being said, I think I’ve found the best pizza crust recipe. Its simple, super customizable and tasty!

Killer Pizza!
1/2 pkg Yeast ( or 1 1/8 tsp)
1 tsp honey
1/2 cup lukewarm water
1 1/2 cup flour ( I use 1 cup wheat and 1/2 AP flour)
1 tsp Olive oil

I like to add dried rosemary and basil, or crushed red pepper flakes- about 1 to 1 1/2 tsp total

- Mix yeast, honey and 1/4 cup water in a small bowl ( or in a glass measuring cup)
- In a medium bowl mix all dry ingredients, and olive oil,  then add wet ingredients and 1/4 cup water. Mix well
- Turn  out on to a well floured surface and knead for 7-8 mins until dough is silky and smooth. If dough seems a little dry add a bit more water.
- Split dough ball in to two pieces and place in to lightly sprayed bowls, cover with a towel and let rest for 30 mins or until doubled
- Preheat oven to 425˚ with pizza stone on the middle rack
- Stretch dough out by hand and then place on a lightly floured pizza peel and roll out with a pin. top with sauce and toppings ( i like using pesto instead of sauce)
- Slide pizza on stone and bake until edges are golden brown and bubbley, or about 15-20 mins

Killer Pancakes!

I just made these this morning and boy are them YUM!

Killer Pancakes- Serves 4, can also be doubled
I got the recipe from BakedBree.com

1 1/2 cup Flour (i used whole wheat)
3 tb sugar
1 tp baking powder
1/2  tp baking soda
1/2 tp salt

1 1/4 cup Butter milk (this really makes them taste amazing!)
1/2 stick of butter, melted (or 4 tb)
1 tp vanilla extract
2 eggs

-Mix dry ingredients in a large bowl, then mix wet ingredients in a smaller one
-Whisk the wet in with the dry, until a smooth batter forms
-Cook in a buttered skillet , over med-high heat,  using a 1/4 measuring cup pour batter in the skillet
-Cook until golden brown on each side
-Enjoy!!

Pleaze Pizza Sunday!

I’ve just made the most amazing pizza ever and it was so simple and easy!  Its a bisquick crust, olive oil (instead of tomato sauce), thin sliced tomatoes, thin sliced red onions, a few baby basil leaves, and  topped with a nice helping of sharp white cheddar cheese. I baked it on my pizza stone which made a really nice crispy crust. After it cooled for just a minute or so, I topped it with a handful of organic mixed salad greens and sprayed a little bit of balsamic vinegar on top.  MMMMmm so tasty! Next time I think I’ll add some garlic and/or herbs to the crust dough.

Amy’s 30 min (or less!) Pizza

Crust
1 1/2 cup Bisquick
1/3 cup water
optional- 1 T minced garlic, 2 t dry mixed italian herbs (basil, oregano,  pasley)

Toppings
1 small tomato, sliced super thin
1/4 red onion, sliced super thin
1/2 cup sharp cheddar cheese (or whatever cheese you have handy, can be made vegan with soy cheese)
1 T fresh basil leaves, torn or shredded

- Preheat oven to 425˚
- Mix bisquick and water in a medium bowl to form dough. If it’s  still too dry add just a little bit of a handful at a time until cohesive.
- Flatten out dough on well floured (os bisquick’d) surface- I used my pizza paddle to help transfer it to the pizza stone- if needed use rolling pin- or can (anything round really) to help flatten out dough. Should be a 6-8 inch round(ish) pizza
- Poke lots of holes in the dough, drizzle a small olive oil all over- but do not cover
-  Top with slices of tomatoes and onions, basil and cheese
- Slide on to pizza stone, cook for 10-15 mins, until bottom of crust is golden brown
- Remove pizza with paddle, let stand a few mins
- Top with salad greens and drizzle (or spray) lightly with balsamic vinegar
- Slice and Enjoy!!

strata-gy

I just put a spinach and muenster cheese egg strata in the fridge to eat tomorrow. No, I am not your average 23 year old grad student. Unless they all come home from class and unwind by preparing food for the next day, and maybe more people do than I think. Who knows. I hope its good, I just kind of winged it and reduced a recipe for a larger dish.
